Salmon is a very popular protein that I have found to be very versatile. In fact, my favorite way to prepare salmon is baked in the oven with lemon juice and dill. The key to baking salmon on high heat for half an hour is conducting the cooking process properly.

To do this you need to take into account how long it takes salmon to bake at 425 degrees Fahrenheit or 220 degrees Celsius when prepared in an oven pan of foil so that both sides are evenly cooked and no parts of the fish are overcooked while other parts remain undercooked. They key also lies on knowing if you can safely cut into your fillet right away without waiting for it to cool down first as well as acquiring knowledge regarding how thick your salmon fillet is before it gets cooked.

(You need to check this to determine if Salmon is done.) If it’s not done yet, cover with aluminum foil and cook for 5 more minutes before checking again. After 21-25 minutes, remove from heat.

It’s important to keep an eye on your fish as it bakes because you want to avoid overcooking it. Cooking at a high temperature can result in your fish becoming dry and rubbery, so it’s important to stop the cooking process before the salmon is completely done and let it sit for 5 more minutes after removing from heat.

5. Remove fillet from oven and transfer onto a plate. Let salmon cool for 5-10 minutes depending on thickness of cut. Cut into thin strips or cubes using a sharp knife or fork and serve with lemon wedges. For best results, use within 2 days of preparation if refrigerated; store uncooked salmon covered tightly with plastic wrap in an airtight container in the refrigerator for up to two days.

Freezing: Wrap tightly in aluminum foil or plastic freezer wrap, label date, and freeze up to 4 months. Thaw in refrigerator before use.

Additional Tips:

1. As mentioned above, you can cook salmon using other methods such as pan-frying and grilling. The method I have recommended is most commonly used in baking fish fillets. If you choose to bake your seafood using other methods, here are some tips to help you along the way:

Pan Frying (Using a Deep Pan): Add a little bit of oil on medium high heat until it’s hot enough to sizzle a drop of water. Place your salmon in the frying pan flesh side down first then turn over after about 2 minutes or when both sides are browned evenly. This will take another 3-5 minutes depending on thickness and whether you want it well done or only partially done. Remove from heat when the edges are slightly browned and flakes easily.

If you have never tried cooking your salmon in a pan before, I recommend preparing a smaller piece of fish for your first attempt. This will allow you to focus more on how it’s done rather than over-catering to a large party or gathering and ruining your reputation as a chef by having overly cooked or dry fillets!

2. If grilling outdoors is more suitable, here are some tips: Marinate the salmon with salt, pepper, herbs de provence (or other ingredients like soy sauce if desired), oil etc before placing flesh side down on grill/pan so that it has an even coat all around. Grill each side evenly until it starts to flake and turn opaque.

3. Serve with lemon wedges or citrus juice if desired. Lemon juice add a great flavor kick as well as protecting your fish from becoming dry during cooking. It also helps prevent discoloration which occurs when certain foods are cooked for too long at high heat. Grilling sometimes makes fish look a little dull but lemon adds just enough brightness to make up for that!

How Long to Bake Salmon at 450?

To properly cook salmon at a high temperature of 450F, you will need to bake the fish for approximately 15 minutes or until it’s opaque and cooked through. However, keep in mind that thicker pieces may take longer to finish cooking since there is more flesh exposed to heat.

Even if 25% of your fillet is still uncooked after removing from the oven, you can easily remedy this by leaving it in the oven for 5 extra minutes (but no more than that!).

Can I use other liquids in place of wine?

Yes! You can also use broth, stock or juice as an alternative to wine. When using liquid alternatives like broth/stock, steep herbs such as chopped onion, ginger slices or garlic cloves into the sauce to infuse the salmon with more flavor.

Note: I would not recommend using plain water as it may affect the taste of your fish in a negative way.

Does frozen fillets work for this recipe?

Yes! If you’re planning on making baked salmon within the next few days, you can freeze thawed or fresh (uncooked) fillets first before proceeding with this recipe. Each time I prepare this dish, I always use no less than 2 pounds of raw salmon so that everyone gets their fair share of food and because I’m under pressure to feed a family of five growing boys!

Just remember not to prepare these too far ahead since frozen foods do lose nutritional value over time. By freezing them sooner rather than later will also ensure the freshest possible ingredients for your guests!

As with any fish, if you don’t eat it quickly after cooking, store it in an airtight container in the fridge until ready to be eaten. During this time, I recommend that you place cling wrap directly on top of the salmon because leaving it out on a plate/platter may allow moisture from condensation to fall onto it. This will in turn make your cooked salmon more susceptible to bacteria and spoilage.

The cooking time will be roughly the same regardless of what temperature you use. Prolonging baking time will result in overcooking the outside before the middle is done and vice-versa. If you want your fish to be more cooked than this recipe specifies, try reducing the amount of liquid ingredients in the sauce or fewer minutes of cooking. Cooked salmon should have a buttery consistency on top but still juicy, soft and flaky inside!

2. How long does it take to cook salmon in an oven?

Baking raw salmon for 15 minutes (and up to 20 minutes if fillet is extra thick), followed by a quick broil until exterior crust forms/color deepens (if desired), will result in fully cooked salmon every time. This is the method I use to cook my salmon because it gets me close to restaurant quality flavor/texture without having to wait over an hour for it to finish cooking!

3. What temperature should I bake my salmon at?

If you’re using a convection oven, set it to 425F and follow other instructions as indicated below. Note: You may have to adjust cooking times depending on whether your oven runs hot or cold but the baking process itself stays relatively the same.

Preheat oven to 425F. Cut salmon into desired pieces. Season with salt and pepper (jelly side up) and place skin side down on a parchment paper lined baking sheet or pan. Arrange lemon slices, shallots and other aromatics as desired but try not to let them overlap too much because it will inhibit the cooking process.

You may also choose to place all ingredients in a covered casserole dish before placing in oven instead of arranging all over fish fillets as I did in my photos here. Cook for 15 minutes at 425F (or longer if you want your salmon fully cooked). After 15 minutes, switch oven to broil setting and cook for 2-3 minutes until exterior crust begins forming/color deepens (optional). To serve, arrange pieces of salmon on a plate and spoon the juice/liquid from pan over fish.

Tip: If you have extra lemon slices after making this dish, store them in an airtight container for up to 1 week. You can also freeze unused ones until ready to use again (I usually keep a few bags of frozen skinless/boneless pieces in my freezer so I’m able to make recipes like this one whenever I want).

4. How to choose the best quality of salmon?

When selecting salmon for purchase, consider the following three factors:

a. Skin color:

Salmon with a darker skin will taste less fishy and more “meaty” than salmon with lighter colored (pinkish/orange) flesh because it means that your salmon was probably less fattened during its growth period.

b. Size of fillets: Thin cut or small fillets are not necessarily junk. They can be just as moist and flavorful compared to larger cuts but should be baked longer in an oven to fully cook them through. Thicker pieces of salmon may take much longer to bake all the way through if using 425F temperature or lower (i.e. 325F-350F).

c. Visible glazing: Salmon with a shiny glazing on the skin when purchased should be avoided. This is an indication that your fish has been previously frozen and defrosted, making it less moist and fresh than others. Be sure to check this when purchasing!

5. How To Store Leftover Cooked Salmon?

Leftover cooked salmon can be eaten immediately or stored in the fridge for up to 3 days.  To store, cover pieces of cooked salmon with plastic wrap/saran wrap or put in airtight containers. Make sure you do not place wet washed-off lemon slices over salmon because the acidity will cause them to turn mushy/soft and unsuitable for consumption.

You can also freeze leftover cooked or raw salmon indefinitely if desired (I usually keep a few bags of frozen skinless/boneless pieces in my freezer so I’m able to make recipes like this one whenever I want).

Other Cooking Notes:

a. Amount of salmon needed?  

If you get 2 pounds (4 filets) or more, you can either divide the salmon into portions and freeze some for later use (freeze raw; do not cook first!) or just bake everything straight away.  It only takes 15 minutes to cook anyway!  Plus leftover cooked salmon reheats well in the oven/toaster oven/microwave the next day so it’s always nice to bake up a bigger batch and have leftovers.

Adjust cooking times as desired but note that if baking at lower temperatures [325F-350F] for longer periods of time, the salmon will probably turn out much drier.

b. What if you don’t have fresh lemon slices?

Don’t worry!  You can still make this salmon although it might taste slightly different without the added acidity from the lemons. Try adding other acidic produce/products such as orange slices or vinegar instead and see what works best for you.

c. I wouldn’t recommend using a non-stick pan to cook salmon:

Because there is some concern that food cooked in these pans could release toxic chemicals into our food which could be harmful to our health . Baking your salmon with a traditional baking sheet/pan lined with parchment paper (as shown above), however, should not be a concern unless you are using some kind of metal cookie sheet/pan that has been rusting or chemically treated.

d. What to do when salmon gets stuck on the pan?   It’s not uncommon for salmon fillets to stick a little bit (especially if they are thin cuts and our dish calls for gentle cooking). You can try letting them sit in the oven without opening the oven door (after pre-heating as per instructions above), lightly spraying with water by using your hands, scraping carefully with spatula, or loosening with spatula under hot tap water.

I finally took your advice and cooked salmon this way. Thank you so much! The results were fantastic (and it wasn’t overcooked!). Just cooked a lot of red quinoa with chopped tomatoes & basil mixed in. Will try again soon, absolutely loved the salmon with lemon juice on top.

So smart! I can’t believe this never occurred to me before. LOVE seeing how many recipes can be simplified by one change or another; at least for me anyway. Salmon is so easy normally that I never thought about doing anything differently than when cooking meat, but here we are and now I don’t mind doing it this way.

This article was just what I needed since salmon is one of my favorite foods but we never have good recipes for it.
